Bacon Wrapped Asparagus
Serves 4
24 medium to large trimmed and peeled asparagus
8 strips of a good quality bacon
Black pepper to taste
2 tbsp. of olive oil
Wrap 3 asparagus together with a strip of bacon. Repeat until all the asparagus are wrapped.
Grate the black pepper over the bacon.
Heat the oil in a 12 inch skillet.
Over medium high heat, add the wrapped asparagus in batches and cook, turning as needed until they are a nice golden brown. Approximately 6-8 minutes. Serve hot.
This recipe can also be prepared with fresh scallions or a mix of asparagus and scallions.
